...their books are in a mess. I mean way, way, way behind. I picked up a client for a few days of consulting work, and now they've asked to do their books.

Bill them a full month for the set up work and just dive in starting as far back as you can. I am setting up a client who owns a coffee shop but has never kept the books. It is a pain to get all of the information together but the only way to eat an elephant is one bite at a time.
